The rooms, created by the well-known architect Alessandro Agrati, are in full harmony and consistency with the philosophy of the kitchen, with a few but selected ingredients, enhanching each flavor.

Philosophy of eating

The concept of "gastronomic tradition and creative inspiration" represents the main theme of the menus proposed, updated and innovated by the Ecrudo team, according to the rhythm of seasons and the short-kilometer market.
The care, the detailed study of culinary themes is aimed at satisfying the most demanding tastes, that can find enjoyment among the most diverse gastronomic proposals at Ecrudo: raw and cooked, meat and fish, vegetables and much more, all declined with originality and sensitivity to the new frontiers of well-being.

Declinations of taste

Everything was done thinking of two essential aspects: first health and then taste.
Ecrudo wants to tell the story of fragments of territory by selecting the products of excellence and "paying attention to what you put in your plate".
Spontaneous herbs have great benefits for the body, stone-ground flour and kneaded with mother yeast are more digestible and Himalayan salt does not create charcoal.
